I love peanut sauce. I probably could eat cardboard if it was submerged in peanut sauce and enjoy it, maybe not, but maybe.
2/3 c light coconut milk
1/4 tsp red curry paste
1/3 c crunchy peanut butter
2 tsp agave
1 tbsp low sodium soy sauce (or tamari, if you are allergic to wheat)
This could not be any easier to make! Toss all of these ingredients into a mixer and serve! The peanut sauce will thicken when refrigerated, so you might consider making it a few hours or even a day before serving.
Serves 4… unless your me… then the fight for the peanut sauce is on!
