Thin crust ricotta pizza

You guys know my history with pizza right?! If you don’t let me explain again :) The combination of dough and cheese is quite an un-agreeable combination for my system. So what I do, well we don’t order pizza like most people do and I can count on my fingers the number of times we have. I try and come up with my own or borrowed ideas to tame those pizza cravings when they arise, yesterday I went the traditional route, i.e. whole wheat dough but without the hassle of yeast. Yeast that’s my enemy!!! If I had the time, I would love to make a traditional dough but when you are busy you take the easy way out right. Well this one is, you can easily make it on a weeknight.

Recipe

Dough:

1 cup whole wheat flour

water to knead and make the dough.

Roll out the dough and shape into a thin crust.

Toppings:

  • Organic marinara sauce (I made my own)
  • Ricotta cheese about 1/4 cup
  • any veg that you may have..I had yellow squash.
  • Arugula
  • Daiya cheese or organic cheddar cheese

Each bite is crispy, just the way I like it and not too doughy.

Next time, I am going to try the 3 mushroom and arugula pizza. I’ve had my mind fixed on this combination since I saw it one Brixx pizza’s menu.
