The Tooth Fairy

Good Evening!

It has been a good day all in all, but I am really looking forward to the weekend. One more day! My day of eats has been very tasty. I ended up running on the tread mill for 30 minutes and then doing a series of ab exercises. I ran out of time to do the P90X DVD today but will possibly do it tomorrow.

After my run I made a quick lunch before heading out the door. I made a Dark Chocolate Almond Butter and Banana Crunch Wrap. It was pretty darn amazing. The Dark Chocolate Almond Butter is the grind it yourself kind, really thick and a bit gritty. Yum.

Dark Chocolate Almond Butter and Banana Crunch Wrap

1 La Tortilla Factory Whole Wheat Tortilla
1 tablespoon Dark Chocolate Almond Butter
1 banana split in half
1 tablespoon sliced almonds

Heat the tortilla up in the microwave for 20 seconds. Spread with Almond Butter and then top with banana and sprinkle with almonds. Wrap up and Enjoy!

This is such a great quick meal, totally satisfying and slightly decadent.

Emmet and I decided to hang out around the University of Texas Campus today. There are some fun shops to look at and we got a little walk in around the campus. We inevitably looped around to Swirll and both got some frozen yogurt! I had the most interesting flavor of tart today, it was Taro Tart and it was so good. Taro is a root vegetable and the flavor of the yogurt was really interesting, it is actually hard to describe. So Emmet and I are pretty loyal Yogurt Planet fans but Swirll has some really good Tart Flavors. I have heard of another frozen yogurt place called Yogurt Spot that I am going to need to hunt down and try.



Dinner was a sandwich that I got out of the new issue of Clean Eating Magazine, it is a Clean Cuban Sandwich and I was dying to make one. I tweaked my version just a smidge, did not feel the need to add the ham along with the pork tenderloin but I made my husband one last night with the ham and he loved it! I also picked up a pre-marinated Lime Chipolte Pork Tenderloin at Central Market, so skipped the steps of marinating the meat. This is a great sandwich and to be honest, I am not sure if I have ever ordered a real Cubano Sandwich but this was really, really good!

Clean Cuban Sandwich


Clean Cuban Sandwich

1 whole wheat roll

2 tbsp of white wine vinegar
1 tsp of Sucanat
1/2 medium cucumber, peeled and thinly sliced
Combine white wine vinegar and Sucanat in bowl, add cucumbers and marinate for at least 30 minutes.

1 tablespoon dijon mustard
1 slice of swiss cheese
1/2 cup of arugula
3 oz of cooked pork tenderloin, thin rounds

Assemble sandwich and enjoy!

I trained my evening clients and now have one more Baby Boot Camp to teach tomorrow and then it is officially the weekend!

My sister and kids are coming and Sarah and I are planning some good eats while she is staying with us next week. Black Bean Dip, Edamame Hummus and other goodies. Can't wait.

And last but not least.... I can't believe I almost forgot, but my daughter's first front tooth came out tonight... or should I say she yanked it out! She said it was bothering her and it was a bit loose but I swear she worked on getting that tooth out for 30 minutes... ouch! I can't believe how different she looks! She is totally a big girl now and has big teeth growing in... it is going way to fast! She looks adorable and she is quite excited for the tooth fairy to come. (a bit of a problem since I pretty much use my debit card for everything- Daddy to the rescue) Whew!
