I have this huge character flaw..a one track mind. When I decide to do something, I literally can not do anything else. That’s what happened today. I have one thing on my mind and it has literally paralyzed every other aspect of my life, including blogging. I like to share my blog posts in the morning, but as you can see, the one track mind won, and I completely forgot!
F Week starts with Flaxy French Toast! We have been eating French toast this way for years! Adding flax to different foods your kids are already eating is a great way to increase the Omega 3’s in their diet, folate, fiber, and manganese. And since my kids already loved French Toast, it was an easy add-in and we’ve been doing it as long as I can remember. Today’s French Toast had a little different flavor than traditional. Here is what we did:
4 Eggs
2 TBL ground Flax meal
1/2 tsp. almond extract.
4 slices whole wheat bread
Mix eggs, flax meal, and almond extract in a shallow bowl. Dip whole wheat bread into mixture and soak both sides of bread. Remove from bowl and place on a griddle. Cook both sides until egg is no longer runny.
