So, here it is December 12th. I have no gifts purchased (I have a list), no decorations put up (still looking at Thanksgiving decorations), no cookies made (had eight kinds of cookies made and in the freezer before Thanksgiving last year) and oh yeah, no Christmas cards to send out.
I’m usually not this disorganized. Not sure why I am this year, but I am. Anyway, I knew I had a lot to get done before Christmas, but I wasn’t ready to tackle the malls today, so I decided to start to make cookies. I had been to the supermarket yesterday and again today, stocking my pantry with everything I needed to start making my Christmas cookies.
I had the Christmas music playing next to my pumpkin and turkey decorations and I was bopping around the kitchen all happy and feeling festive, things were going well. That was until I was faced with The Brown Sugar Dilemma.

I purposely didn’t buy any brown sugar because I knew I had some in the pantry, I only needed a cup. Well, that cup of brown sugar cost me about an hour of my time. It would have been faster to go back to the supermarket, but no, I was determined to get this brown sugar dilemma resolved without making another trip to the supermarket.
I first put it in a bowl and started hitting it with the end of a wooden spoon, that didn’t work. Then I put it in a plastic bag and tried hitting it with the rolling pin until the countertop almost cracked, again no luck.
In the middle of all this my son and daughter-in-law called. I was telling them my dilemma and they said that they had read somewhere that you can just put the brown sugar in a bowl with a piece of bread or a couple of apple slices for 30 seconds and it would soften up. Sounded a little strange to me, but I figured, oh well, I’ll give it a try.
So, I put my baseball plus size chunk of dark brown sugar in a microwavable bowl and put a piece of plain white bread over it. Hit 30 seconds on the microwave and waited. No luck after 30 seconds, put in 30 seconds more, guess what, it was starting to soften up. Gave it another 30 seconds and I was able to use a fork to pull the brown sugar apart enough for me to measure out the one cup I needed for the cookies. Who knew!
