The 3-Day De-Stress Diet Kick Off

Good Afternoon and Happy Thursday!

It was a beautiful day here in Portland and the kids and I spent the afternoon outside soaking in the rays! Emmet longboarded with his buddies and Zoe and I walked the dog and enjoyed the views from Mt. Tabor. So, I mentioned the 3-Day De-Stress Diet that I saw in the new issue of More Magazine the other day and decided today was the day to give it a try.  I did not follow it exactly so check out the 3-Day De-Stress Diet created by Dawn Jackson Blatner, RD here .

I did however start my morning off with the
Muesli with Pear & Candied Ginger Compote

In a bowl combine
1⁄2 cup rolled oats with
1⁄2 cup 1% milk. Let sit in fridge 15 minutes or overnight.
Mix 1 finely chopped pear, 2 tablespoons finely chopped candied ginger & 1 tablespoon ground flaxseed.
Top oat mixture with pear mixture.

This muesli was absolutely delicious and a great way to start the day.
I loved the addition of Candied Ginger.  It was sweet and spicy.

Lunch was a colorful meal loaded with dark leafy greens and a warm, creamy sweet potato.



 There really is nothing better than greens and sweet potatoes.  I can't seem to go a week without making some sort of Kale Salad and this is a variation of a recipe I saw in Color Me Vegan.

 Citrus Kale Salad

recipe adapted from Color Me Vegan by Colleen Patrick-Goudreau
1 bunch Lacinto Kale, leaves stripped from rib and finely chopped
1 cup red cabbage, finely shredded 2 oranges, peeled and separated into segments 1 small red onion, thinly sliced 1 avocado, sliced into cubes 1 jalapeno, seeded and minced 2 tbsp sunflower seeds 1/4 cup of fresh orange juice juice from 1 lime 1 tbsp apple cider vinegar 1 tbsp agave nectar zest from 1 orange, for garnish

Add the kale, oranges, onion, avocado, jalapeno, sunflower seeds in a large bowl.  In a separate bowl, whisk together the orange juice, lime juice, vinegar and agave nectar. Pour the dressing over the salad and toss to coat evenly.  Garnish with orange zest.

Dinner was a simple but satisfying meal



Salmon + Sweet Potato + Sesame Broccoli

Now you know that I can't end the day without a sweet treat right??
Lately, my favorite treat has been a handful of these Baking Chunks smeared with a little Sunflower Butter for a quick homemade Sunbutter Cup.

I am definitely feeling a little less stressed now.  I am not sure if it is my diet or the fact that I have the day off tomorrow with the kids but I am a happy camper.

The kids are I are going to work on the yard.  It is time to rake up the leaves and get ready for the cooler weather.  I am planning on sleeping in and then taking a long run in the morning.  I can't wait!  I am also excited because the kids said they would like to try the Blossoming Lotus Cafe out and we may sneak over there for lunch.  Man, if that happens I am really going to be happy.

We shall see how the day plays out but for now it is time to get ready to watch Grey's Anatomy and then head off to bed.
