Today was my first day of Clinical 2- which means I completed Clinical 1 last week! Woo hoo!
Early this morning, I missed the bus which meant I got a little extra cardio in bright and early and decided to walk home from the hospital too. I got about 60 minutes in and some fresh air!
After work today I took Luna on a walk around the river, then came home to make Thai Fried Quinoa and thai turkey meatballs!
Preheat oven to 400F. Place toast and cilantro in a food processor and pulse until fine. Mix together the breadcrumb mixture, turkey, egg, garlic, and rooster sauce into a bowl and mix thoroughly. Form the meat mixture into golf ball sized balls. Place balls, one inch apart, on a sheet pan. Bake for 25 minutes or until cooked through.
