Tempeh & Kale "Fried Rice"

First of all... If you are as confused as I was on tempeh, I'll explain it to you (and how to cook with it).  It is definitely an acquired taste in my opinion, but great if you are trying to find a high protein vegetarian option.


So, what is tempeh? 

It comes from the whole soybean, so it has a tofu-like/veggie burger-like texture and taste.  Unlike tofu however, tempeh is fermented and contains a much higher amount of protein. When you are at your local health food store you can grab a package of tempeh in the refrigerated section next to the tofu (I like the garden veggie flavored).  Its great for sandwiches, stir fry, tacos, and on top of salads (and remember to always cook it- typically on the stove top).

Tempeh & Kale "Fried Rice" (serves 2)
Ingredients
5-6 Leaves of Dino Kale (washed and stem removed)1/2 sliced yellow onion 2 cups Cooked Short Grain Brown Rice1/2 Package of tempeh (sliced thin and then cubed- about 1/2 inch thick, 2 inches long)1 lime1/2 tablespoon of olive oil 1 tablespoon of agave nectar1 tablespoon of Braggs Liquid Aminos Sea Salt/Pepper to taste
