Take a virtual tour of Mediterranean cuisine

Posted by Nancy B.

The Mediterranean region has three areas which share many culinary traits: 1) Southern Europe -- Italy, France and Spain, 2) Eastern Mediterranean -- Egypt, Greece, Israel, Lebanon, Syria and Turkey and 3) North Africa -- especially Morocco. In addition to olives and olive oils, fruits and vegetables which thrive in the warm Mediterranean climates include eggplants, squashes, peppers, mushrooms, cucumbers, artichokes, okra, and various greens and lettuces, melons, a variety of citrus fruits, lentils, chickpeas, fava beans, green beans, and white kidney beans in Italy. Food Service Director's online magazine offers a culinary tour of these countries, Stanford University's dining platform and Mediterranean diet strategies.
