If you love chicken, you’re going to love this meal! Not only does it taste amazing, it is an extremely healthy and well balanced meal for endurance athletes. It’s great for a post workout meal, or something you cook on the weekend and save for a meal at work. One of my favorites!
6 – 8 Chicken Tenderloins
2 Cups Sweet Barbecue Sauce
3 Red Chili Peppers
1 Tbsp Seasoned Salt
3 Tbsp Extra Virgin Olive Oil
1 Stalk of Broccoli
Prep Time / Cook Time: 15 min / 60 min
To begin, dice red peppers into small pieces and add to barbecue sauce in bowl. Next clean chicken tenderloins, and place in sauce. Allow chicken to marinate over night if possible, but 1 Hr is plenty. While chicken is marinating, cut broccoli into bit size pieces and drizzle with oil and salt on cookie sheet. Also coat outside of potato with oil and salt. Preheat oven to 400 degrees. Bake potato for 50 min on rack. With ten minutes remaining, put broccoli in oven and place chicken on grill (… also works on George Foreman). Enjoy!
