Portobello Mushrooms with Bubbling Pesto
PRO/FATS AND VEGGIES — LEVEL ONE

Serves 4
These mushrooms make a great appetizer or a delicious accompaniment for a summer meal alongside a steak. They work especially well if you are using your outdoor grill, but you can also broil them in the oven.

4 large portobello mushrooms
Olive oil for brushing
Salt and freshly ground black pepper
1 recipe Basil Pesto (p. 155)
4 tablespoons freshly grated Parmesan cheese

Trim the stems off the mushrooms. Brush mushrooms with olive oil and season lightly. Cook gill side down over medium coals or in the broiler for 5 minutes.

Turn the mushrooms over and spread a spoonful of pesto over the entire surface. Continue to cook for 10 minutes or until the mushrooms are very tender and the pesto is bubbling. Sprinkle the Parmesan on top of the pesto and return to broiler until cheese is melted and golden.

Dawn’s Deviled Eggs
PRO/FATS AND VEGGIES — LEVEL ONE

Makes 10
My good friend Barry Manilow has a wonderful cook named Dawn. These are her delicious deviled eggs. Her original recipe includes avocado, which makes the filling green. Try it that way for Level Two.

5 hard-boiled eggs, halved lengthwise
1 tablespoon minced scallion, white and light green parts
1 large jalapeno pepper, seeded and minced
Juice from 1 lime
1 tablespoon mayonnaise
1/2 teaspoon kosher salt, or to taste
red chili flakes for garnish

Remove the yolks from the whites. Set the whites aside. Mash the yolks in a bowl with a fork. Add the scallion, jalapeño, lime juice, mayonnaise, and salt. Add more mayonnaise to reach desired consistency. Mash with a fork until blended. Using a teaspoon, carefully stuff whites with yolk mixture, mounding the tops.
For extra heat, garnish with red chili flakes.
For Level Two
Add 1 whole mashed avocado to the egg yolk mixture.

5 Stars Perfect for people with digestion problems too!
This was the first book I purchased from Suzanne Somers. I love her recipes, and you certainly CAN lose weight by following her very healthy, and incredibly simple plan. However, I want to talk about another benefit from the book/plan.

This book is wonderful for people recovering from any kind of surgery of the GI tract. Anyone with issues digesting food, or plagued by gas, bloating, reflux, constipation, or diarrhea, should seriously consider buying this book.

Most “issues” disappear within a day or two, and by day three, most feel “normal” again.

It’s a very healthy way to eat, stressing fresh, REAL foods, and as others have said, the recipes are pretty darn good too.

For those concerned with the “diet” aspect, should they need to gain weight instead of lose it, this book is still useful. For one thing, you will be able to keep food down. For another, you can always increase the fat content and still gain or maintain your weight.

Following her plan long term is fairly easy, although if you, as I do, love sandwiches, after you reach your “goal” and if you are willing to risk the gastro-intestinal issues of mixing food types, or if you just want to splurge sometimes, cheating is OK. Just get back on the program if you are still using it to control gastro-intestinal or post surgical issues, or want to continue to drop the pounds.

Frankly, it’s the “healthiest” diet book out there, and not having to “count” is wonderful.

4 Stars Works well with Mediterranean Diet
Several years ago I lost weight Somersizing. I’m back so that I can continue to eliminate junk from my diet and lose 25. I learned how to cook vegetables the first time around and am so grateful to Suzanne for bringing vegetables into my diet. The only canned food I buy is tomato puree and beans. However, I really recommend olive oil over butter, and I this time around I’m moderating dairy. I also am no longer addicted to diet soda – I’m too afraid of the chemicals now. I really can see a correlation between this way of eating and the original European/Mediterranean Diet. My mother passed away from cancer 5 years ago at 69. When she moved to this country, she thought she was a health nut, but we ate a lot of processed foods. Our kitchen had mac & cheese, condensed soups, margarine, milk, ice cream, white rice and pasta. Mom often struggled with 30 extra pounds. She eliminated garlic and fresh herbs, because these were not popular in the US when I was growing up. I have herbs and vegetables growing everywhere, much like my Greek grandmother, and love the Farmer’s Market! My grandma lived to almost 90, my grandpa, 102! I really believe that fresh food and moderate food combining is wonderful for you. I now eat food based on how it will make me feel later. I don’t dare diet – who wants to feel awful? At 38, I also now realize that deprivation dieting ages you faster. Even though I need to lose these last pounds, the olive oil and fats make me look much younger than I am. Also, one unhappy result of low-fat diets was that I lost weight in my chest first (not pretty when you have no fat there and have had 2 children). This never happened with Somersizing!

My friend lost 100# in 9 months on this plan; My daughter went from a size 22 to an 8 in 12 months. A coworker had her blood pressure medicine halved after being on this eating plan for 6 months. I have already lost 12# in 2 weeks. I love it. I know it works. The book was in excellent condition and the price was fabulous.

I bought this book because I was looking for a formula to gain hormonal balance…Well, so far so good.

This eating plan makes great sense and is so very easy to follow. I do not experience sugar highs and lows and I feel better than I have in a long time.

Once you learn the “rules” this is a plan that you can stick to all your life.
