That’s right. The tofu monster is out to get you all. Be afraid. Be very afraid.

Whenever you tell someone “I’m a vegan” they usually ask “Where do you get your protein? Tofu?”. Well I made this post for all of you out there who thinks bad of the white block of bean curd that we think of as delicious. In fact, for the sake of Vegan Mofo , tofu just made it in as SuperFood # 18!
Tofu is actually one of the healthiest foods out there if you think about it. It’s incredibly easy to digest and is packed full of protein. With less than 90 calories a serving, it could settle as a weight loss food now couldn’t it? 50% of those calories come from fat, but even that is low. And it is has a large amount of water in it, so it will keep you hydrated!
Well for today’s recipe, I was thinking we would do breakfast. It is my favorite meal of the day after all. How does eggs and sausage sound. No? How about tofu scramble and Agave-soy tofu? That’s better.
Simple Tofu Scramble
12oz Silken tofu
3 tbsp. water
2 tbsp. nutritional yeast
1 tbsp. tahini
2 tbsp. corn starch or arrowroot powder
1 tsp. Dijon mustard
½ tsp. baking powder
2 tsp. olive oil
½ medium white onion, diced (optional)
-Throw all of your ingredients except the oil into the blender and blend until smooth.
-Heat the olive oil and onion on a skillet and pour on your mixture (you can do it strait from the blender).
-Mix it around on the pan and keep things moving until it begins to brown and look like eggs.
12 oz firm tofu
2 tbsp. dark agave nectar(or maple syrup)
2 tbsp. tamari(or soy sauce)
-Cut your tofu into 8 thick squares. Wrap them in a tea towel or napkin and set something heavy on top of it to get most of the moisture out of it. About 5 min.
-Mix the agave and tamari in a bowl. Add the tofu and let it sit for 2 minutes. Then flip it and let it sit for another 2 min.
-Cook the tofu on a skillet until brown on both sides. Then pour the remaining mixture over the tofu and cook until it gets bubbly and thick.
See? That wasn’t so hard now was it. Tofu is just a blank slate. Its not just a mushy block of bean…whatever. You flavor it how you want and with what you want. Do it right, and you have yourself a Super Food masterpiece. Do it wrong however, and you have the gross block of bean curd that haunted your nightmares and made you want to sleep with a night light.
