When the sunny days show up here all I want to do is be outside. Over the weekend we went to a local park/sand bar and hung out near the water. I wanted to pack a tasty and refreshing lunch for us and our friends so here’s what I made.
Individual whole wheat baguette sandwiches topped with smashed avocado or roasted red pepper aioli, crunchy romaine lettuce, colby jack cheese or goat cheese and roasted sliced italian chicken (I followed this basic recipe but reduced it down for 1 chicken breast baked for 25 minutes)
Sandwiches wrapped and ready to go with hummus, rice crackers, fresh sugar snack peas from our garden, sliced cucumber and apples.
I got sand in my camera while we were there So picturing taking is on a hold til that is fixed.
Another sunny day treat that is refreshing and tasty are cool drinks. I made a big pitcher of iced orange green tea.
Iced Orange Green Tea
In 6 cups of boiling water went 8 manadarin green tea bags. Steep for 2 minutes and remove tea bags. Once the tea is to room temperature squeeze in the juice from 1 orange.
Serve over ice with a slice of orange.
This was light in flavor and super refreshing. If you like your tea sweetened you can add a bit of honey to it while it is still warm.
