Bob's Red Mill is one of my favorite companies for gluten free products. You can make these for guests and they will never know they are vegan - they're so fluffy and delicious. When I first found out about my daughter's food allergies I was sad because I didn't think we'd be able to make things like cookies or pancakes for special occasions. Not until I searched around did I realize how easy it actually is to make gluten free vegan pancakes! I like to conjure up my Semi-Home Made self and use Bob's Red Mill Gluten Free pancake mix.
