Sunday Morning Banana Lovecakes

When I first found out about my daughter's food allergies I was sad because I didn't think we'd be able to make things like cookies or pancakes for special occasions.  Not until I searched around did I realize how easy it actually is to make gluten free vegan pancakes!  I like to conjure up my Semi-Home Made self and use Bob's Red Mill Gluten Free pancake mix.  Bob's Red Mill is one of my favorite companies for gluten free products.  You can make these for guests and they will never know they are vegan - they're so fluffy and delicious. 


Now we can have our Sunday morning pancake lovecake tradition!
Sunday Morning Banana Lovecakes Serves 4 (2 4-inch lovecakes) Printable Recipe Vegan, Gluten Free, Dairy Free

Ingredients

1 1/2 cups Bobs Red Mill Gluten Free Pancake Mix
Egg replacer equal to one egg mixed to package directions, or one egg
3/4 cup non dairy milk, or milk of choice
1 Tbsp oil
1 tsp vanilla
Cinnamon, to taste
1 banana, sliced

Directions

1. Preheat a skillet over medium high heat. In a medium bowl mix pancake mix through cinnamon. Spray skillet with cooking spray; scoop 1/4 to 1/3 cup pancake mix into a measuring cup; pour half onto skillet into a teardrop shape then pour the second half in an adjoining teardrop to make a heart.  Push a few bananas into the batter.  When middle begins to bubble, flip and cook until browned.

2. Repeat until batter is gone.
