Stitches, Chocolate Cherry Almond Oatmeal Cookies and NYC

Good Evening Everyone
Well, I have had quite a day today. I started off the day well rested and fully fueled up with a fantastic bowl of  Berry Almond Chia Oats.

Berry Almond Chia Oats

1/2 cup of rolled oats
1/2 cup Silk Almond Milk
1/2 cup water
1 tbsp Chia Seeds
dash of cinnamon

Combine above ingredients in a small pan and cook over medium heat for 4-5 minutes.  Remove from heat and top with:

fresh raspberries and blueberries
1 tbsp of almonds
drizzle of honey


I got a 5 mile run in before teaching Bliss Boot Camp and then met a client at the park to train her.  So, so far the day is off to a fantastic start when I get a message from school that Emmet (my son) has fallen off the reading deck and has busted open his lip and may need stitches.  Yikes!  No mother likes to hear that there child is hurt and my phone is having issues and is not ringing so I am freaking out because I am not sure how long ago they left the message.  Luckily, my hubby works from home and they had gotten him on the phone and he had already picked up Emmet and was at the Urgent Care.  Needless to say, I made it in time to see the stitches being put in and Emmet was a real trooper.  

Luckily, he did not knock out any teeth and just needed 4-5 stitches on his upper lip.  He has some scratches on his forehead and cheeks but overall he survived the fall quite well.  So well in fact, he wanted to go back to school and show off his stitches to his pals.  Before heading back to school, we stopped at Jamba Juice so he could get a smoothie.  He cut the inside of his mouth as well and it is tender so he will need to eat soft foods for the next couple days while he heals.

Emmet went for the Pomegranate Paradise and even though I don't usually like to drink my calories I tried the 150 calories Strawberry Nirvana and it was just the pick-me-up I needed.  I was a little shaken up by the whole stitches thing.  We have been very fortunate to not have had any broken bones or major stitches thus far in our career as parents so this was our first.

I have not been a Jamba Juice in years and was floored to see this whole Oatmeal Menu.  Since when did they start making oatmeal?  I have to say I was psyched and can't wait to go back and try the Blueberry & Blackberry Oatmeal.  Has anyone tried it there?  Is it any good?  I just like to have oatmeal options when I travel so this made me very excited.

Speaking of travel, I have some very exciting news.  I was invited to visit the Unilever Test Kitchens in NYC.  The day’s events will include a tour of the Unilever test kitchens, demonstrations of their favorite I Can’t Believe It’s Not Butter recipes, a hands-on cooking experience, as well as a meet and greet with brand representatives.  I leave this Thursday and return Friday evening after all the events.  I am so excited and honored to have been asked to attend.

In honor of this trip and to surprise Emmet, I whipped up a batch of his favorite Chocolate Cherry Almond Oatmeal Cookies using I Can't Believe It's Not Butter Cooking and Baking Sticks. These are super soft and tasty cookies.

Chocolate Cherry Almond Oatmeal Cookies

1 cup Whole Wheat Pastry Flour
1 tsp baking powder
1/2 tsp baking soda
2 tbsp I Can't Believe It's Not Butter
1/2 cup of natural cane sugar
1/2 cup of brown sugar
1 large egg
1/4 cup of unsweetened mango applesauce
1 tsp vanilla extract
1 1/2 cups rolled oats
1/2 cup wheat germ
1/2 cup of Dark Chocolate Chips
1/2 cup dried tart cherries
1/2 cup sliced almonds

Preheat oven to 375 degrees. Sift together the flour, baking powder, baking soda and salt. In medium bowl beat the butter and sugar . Beat in the brown sugar and then the egg. Add applesauce, followed by the vanilla. Gently stir in the flour mixture, the oats, wheat germ,  chocolate chips, dried cherries and almonds.

Drop by tablespoons on 2 cookie sheets lined with parchment paper. Bake for 10-12 minutes, or until they are still moist and soft. Cool and enjoy!

I did indulge in one of these babies and it was awesome.  Emmet also was happy to see them when he got home from school.

I taught yoga at Balance Yoga this afternoon and am also excited because I will be teaching the Hot Power Fusion class soon as well.  I am starting to find my yoga teaching voice and am really enjoying working at Balance Yoga, it is a great studio!

I needed to balance my cookie eating with a protein packed dinner so once I got home from teaching I whipped up an Asparagus, Tomato and Feta Egg Scramble.

Asparagus, Tomato and Feta Egg Scramble

1 Eggland's Best  Whole Egg
1 Eggland's Best Egg White
1 cup steamed asparagus chopped
1/2 cup sliced grape tomatoes
1/4 cup feta cheese

Spray a skillet with cooking spray.  Scramble egg and egg white and pour into skillet over medium heat.  Cook for 1 minutes, swirling the egg mixture so it coats the pan.   Add asparagus, tomatoes and feta cheese.  Cook for a few more minutes or until egg is cooked through.   Flip into omelette or enjoy free form style.  

So that concludes my exciting day and I am hoping for a very normal and productive day tomorrow.

The kitchen is officially closed and I am going to squeeze in a weight circuit and abs.
