Recently, all I want to do is eat fruits and vegetables. It doesn’t really matter what it is as long as it is in these two categories!
For breakfast, I have been making smoothies(yep, even when it’s been really cold out) and throwing in a banana, frozen blackberries or raspberries, frozen pineapple, plain greek yogurt, and a small amount of soy milk. I usually make it the night before and put it in a Ball jar to sip on before or after my workout OR to drink on the way to work!
I love how portable the jar is in difference to a cup or mug
For lunch today, I made a sweet potato in the microwave and topped it with cottage cheese and a small drizzle of olive & baby kale salad(baby kale, avocado, and lemon juice).
I don’t know where I came up with cottage cheese on a sweet potato but it was SUPER delicious!
The kale salad was a perfect side with the sweet potato- so colorful and light!
Off to make veggie-filled 4 layer dip for the Super Bowl
