spinach mushroom lasagna

Lasagna, in my mind, has always been “man food”. Therefore, I’ve never liked it. I preferred the much girlier stuffed shells or manicotti when given the choice. I don’t know why I always considered stuffed shells and manicotti “girlier”, but whatever. It works.

However, I recently discovered that I really only don’t care for lasagna with meat in it! That’s sorta weird, too, because I’m not a vegetarian by any stretch of the means. So….lasagna with ground beef? ick. Lasagna with spinach and mushrooms? yum.

Then, all there is left to do is dig in! It’s magic. And no one will even miss the meat. Being the super amazing girlfriend that I am, I brought a hot slice of this over to Adam’s house right when it came out of the oven. I told him I was just “in the area” with a hot slice of lasagna on my floorboard. Imagine that! #instantgirlfriendpoints

This is also a great meal to assemble, freeze, then cook when you’re strapped for time but need a cheesy comfort meal to end the day. Or bring to a friend in need! I like to use fresh baby spinach and cook it myself rather than use the packaged frozen stuff….but you could use the latter if you prefer. I’ve timed it though; it’s really not any faster to defrost then cook frozen spinach. Just my two cents.
