I recently took the plunge and bought a food processor. I had been debating the purchase for a while since I already have a blender, but the lure of slicing and dicing vegetables was just too strong!
In case you are new to the world of food processors, here’s a rundown of the jobs they vs. blenders are made for.
So, while there is overlap there is also a lot that a food processor can do that a blender can’t. While the food processor that I was really coveting was waaaaay out of my price range, I picked up this one for $30 to see how much use I would get out the appliance before investing in something fancy.
Last night I unpacked the unit, gave all the parts a good scrub and immediately felt the need to test its skills by making some slaw. You guys, I shredded a whole bunch of kale in under 1 minute! Perfect slaw shaped ribbons in mere moments. Then I shredded some peppers, grated carrots and whipped up dressing, all in this magical machine. The whole process took me about 10 minutes! Amazing. I think I might be sold on this whole food processing thing.
I drew inspiration for this recipe from Bon Appetit’s Super Slaw recipe. Ok, so I basically just added sriracha to the dressing to spice things up, and used kale instead of cabbage (because is superior, obviously). Oh, and also I added in some almonds that we’re kicking around in my cupboard, they were good for some crunch. The next time I make this vegan, Asian inspired slaw, I will probably throw in some edamame, because edamame is delicious.
If you don’t have a food processor, that’s ok. Just get out a sharp knife and go to town chopping the veg, then blend your dressing in a blender. Your slaw will still be amazing, I pinky swear.

Put all prepped veggies and almonds in a large bowl, toss with dressing.
