One of my favourite things to bake once the weather turns cold is bread. The oven warms up the house and fills the house with a smell no other baking can compare to.
What have I been eating these days? Portable convenient protein filled foods to keep me lasting through long days at work.
This holiday recipe is efficient for not only filling your house with a beautiful bread smell, but also filling your belly with a high protein bread.
Sourdough Protein Bread
•1/2 cup teff flour
•1/2 cup unsweetened whey protein powder
•1/4 cup coconut flour
•1/4 cup vital wheat gluten
•1/4 cup peanut flour
•1/4 cup greek yogurt
•1/4 cup corn starch
•1/4 tsp salt
•1/2 cup warm water
•1 tsp yeast
•1/2 cup eggwhites
•1/2 tsp baking soda
•1/2 tsp baking powder
1)Mix yeast, warm water, and teff and let sit overnight.
2)In the morning add all other dry ingredients.
3)Let sit ~1hour
4)Add in egg whites, egg and greek yogurt.
5)Bake 30 min in 375 def F oven
The prep time is broken down so it may seem tedious and inconvenient, however I surprisingly found it a very easy recipe since no cookie separating etc.
Perfect for a higher protein bread to take on the go. The stats:
~130cal (13 g carbs/2 g fat/ 15 g protein)
Although there are not any herbs for flavouring in the recipe you can always add them. I found that this bread is so full of flavour as is, you don’t even need to top it (although it is delicious topped too)
This is a dense bread
I am aware that this is not real sourdough. I just called it that because it sure tastes like it is!
Almonds and blueberries make a rather delicious nut-fruit pairing. Perhaps my favourite, or maybe apples-peanut butter is a better pairing. Hmm…can’t decide. Let’s leave it as a tie!
