Snow, Sleet, Rain- Oh My

I walked through all three(snow, sleet and rain) this morning- ugh, it was awful! I would much rather have another 10 inches of snow than the sleet and rain! Apparently, Phil did not see his shadow today, but maybe that doesn’t pertain to Boston weather this year  since we are getting another storm on Saturday!

After spin, I came home to a nice bowl of leftover soup! A perfect way to warm up!

Then, after some work outside shoveling and inside on the computer I decided to try and make Panzanella(toasted bread salad) with what I had in the fridge- usually it has cucumbers, tomatoes and basil.

Easy Panzanella

  • 2 pieces of Udi’s whole grain bread , toasted
  • 1/2 green pepper,  diced
  • apple, sliced and diced
  • red pepper, diced
  • 1/2- 3/4 cup of fresh parsley, minced
  • 1 garlic clove, minced
  • 1 tsp of extra virgin olive oil

The vinaigrette:

  • 1 tbsp. of honey mustard
  • 2 tbsp. of apple vinegar
  • 1 tbsp. of olive oil
  • sea salt & freshly ground pepper

- Toast bread until golden brown . Brush olive oil on both pieces of bread and cut it into small pieces. Mix the warm bread with the diced apples, peppers and parsley and garlic.  Use 1/2 the vinaigrette on the salad. Toss and enjoy!

It turned out fantastic!!!

For dinner this evening, Dave had asked for Black Beans & Sausage over brown rice. To make it a bit healthier I like to use turkey sausage.

I had really wanted smashed carrots with honey and chili powder tonight for my dinner. The sweet heat is one of my favorite combinations!  As you can see from my plate, I really love my smashed carrots. I only ate about a third of the black beans and sausage, thankfully Dave ate the rest! Winking smile
