I heart parfaits. I do. MOST of the time they are not as healthy as they are cracked up to be, with lots of granola (loaded in carbs and sugar) and yogurt -which is another deceitful 'healthy' snack, usually has way more sugar than nutritional value, anyways I found this lovely recipe from The South Beach Diet web site, they have a bunch of great healthy recipes! Here's the Berry Vanilla Parfait...
3 large strawberries
1/4 cup blueberries (frozen, but defrosted works great)
3/4 cup low fat sugar free vanilla pudding
1 tbsp fat free cool whip
Layer strawberries cut up on the bottom of a tall glass. (may need some sugar substitute if strawberries aren't sweet enough)
