simple sunday recipe: healthy hamburger helper

I got this recipe from a blog I love, featured on our blog list too!

“Marilou’s Helper”

by marilou on July 29, 2009

If you are in a hurry and want something simple but healthy – Here is a great recipe. I added some steamed carrots and cut up a couple of Mangos to include more vegetables & fruits. Brandon, my step son named it “Marilou’s Helper”. Johnny and I had the leftovers for lunch and it was even better the second day.

Marilous Helper Family-Favorite Cheeseburger Pasta Recipe
From: Healthy Cooking magazine (See eStore)

1-1/2 cups uncooked whole wheat penne pasta
3/4 pound lean ground beef
2 tablespoons finely chopped onion
1 can (14-1/2 ounces) no-salt-added diced tomatoes
2 tablespoons dill pickle relish
2 tablespoons prepared mustard
2 tablespoons ketchup
1 teaspoon steak seasoning
1/4 teaspoon seasoned salt
3/4 cup shredded reduced-fat cheddar cheese
Chopped green onions, optional

1. Cook pasta according to package directions.

2. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.

3. Drain pasta; add to meat mixture.

4. Stir in the tomatoes, relish, mustard, ketchup, steak seasoning and seasoned salt. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.

5. Sprinkle with cheese. Remove from the heat; cover and let stand until cheese is melted. Garnish with green onions if desired.

If you haven’t noticed already, I’ve been trying to include the WeightWatcher Points with every recipes at the suggestion of our good friend, Casey. This one is a little high due to the ground beef.

Each serving has 391 calories, 12 g of fat, 4 g of fiber for a total of 8 WeightWatcher Points.

How do you take meals that might not be so healthy, and fix them up a bit to fit your nutritional needs??
