Valerie from Kuki's Kookbook is featured again today with another fabulous recipe! I got this recipe from my sister-in-law Kristin and I've been wanting to make it for a long time. I finally got around to it this week and it was so good that I can't believe I took so long to try it. The marinade, which is really simple to make, gives the chicken such a nice fresh flavor and makes the meat so juicy and tender. If you work during the day this would be a perfect meal to prepare because you can mix up the marinade in the morning, let it sit while you're at work, and then grill it up when you get home...so easy! Not only is it really delicious and easy to make, but it is also really healthy which is always nice!
Lemon-Herb Chicken
4-6 chicken breasts
1/2 cup lemon juice
1/4 cup olive oil
1 medium onion, minced
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon celery salt
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon marjoram
3 drops tabasco
mix all ingredients together and pour marinade over chicken breasts in a shallow pan. let stand in refrigerator for several hours, turning occasionally. cook on grill.
