Another thing I love but don't eat enough of is soup. Part of the reason is that I don't really care for canned soup. I know there are some good brands on the market and would love to hear of any recommendations that you may have but in general I find them to be a bit salty. Well, this soup was so easy to whip up and was loaded with veggies, lentils and the superfood, Kale.
This literally took 10 minutes or less to throw together with an additional cooking time of 20-30 minutes. There really is no reason not to enjoy a great bowl of hearty nutritious soup on a daily basis. I am going to spend the fall playing around with easy soup recipes. I have also read that soup helps you lose weight if you eat it as your first course at a meal. It fills you up and you are not as tempted to eat more. I often order soup when at restaurants because you can generally find a broth based soup to start with (watch out for cream based soups- loaded with calories). The soup fills me up and helps me keep my hands away from the bread basket.

Simple Red Lentil + Kale Soup 1 container Pacific Natural Foods Low Sodium Organic Vegetable Broth
1/2 white onion diced
1 package frozen Mediterranean Veggies (carrots, cauliflower, zucchini, lima beans, red peppers)
1 can De Cecco canned Diced Tomatoes with Basil
1/2 cup dried red lentils
1 bunch kale, chopped
Pinch of:
salt, pepper, parsley,
Put all of the above ingredients in a soup pot and bring to a boil. Reduce heat and simmer for 20-30 minutes and then enjoy!

Sorry for the delay in posting this wonderful soup recipe. I enjoyed a bowl yesterday and today and I actually found the soup to be a bit tastier today, the flavors were able to marry together overnight. Yum!
So all you need is a carton of good veggie or chicken broth, some veggies, you can then add in some beans/legumes for a hit of protein and you have got a great homemade soup in no time.
Time to put the kiddos to bed and then myself. A good night's rest is just what the doctor ordered.
