Shredded Chicken, Creamy Avocado & Crispy Bacon Sandwich on a Pretzel Bun

If you’ve been reading my blog for a while now, you will know that I have a pretty open love-affair with Aldis grocery store.  The prices are right, produce is great and I can find wild-caught salmon for under $5.  #winning (we still say that, right? Don’t answer that.)

So when I saw that they had pretzel buns for a limited time, I was all over it! I knew I wanted to make a killer sandwich with them (duhhh) and with a healthy twist of course.
shredded chicken, creamy avocado & crispy bacon sandwich on a pretzel bun Some people immediately freak out when they see the word bacon in a recipe and think that it’s totally unhealthy.  Not in my book!  The trick to using bacon in recipes is to use VERY LITTLE.  You don’t need 3-4 slices of a bacon to get what you want from it, which is the flavaaaa.  Seriously all it takes in a recipe sometimes is 1-2 slices.  That’s it.  When you pair it with onions that are loaded with vitamin C, spinach (gotta get that iron), lean chicken breast and creamy avocado (aka: nectar of all healthy fats) you’ve got yourself a killer and nutritious sandwich. The avocado is the perfect substitute for mayo!

I pride myself on eating a balanced diet that is healthy and still full of flavor.  With a sandwich like this you will be so satisfied with just one that you won’t even think about another one. It’s a meal in itself with the bun, and if you’re gluten-free or paleo you can eat this sans bun and over a bed of spinach or a baked sweet potato (the sweet potato option sounds incredible!).

The hubby deemed this as “OMG this is really, really good.  I’d pay for this at a restaurant.”  So I can assure you that this sandwich will win over the men in your life.

Shredded Chicken, Creamy Avocado & Crispy Bacon Sandwich on a Pretzel Bun 

Ingredients (serves 2)

  • 1 chicken breast
  • 1/2 ripe avocado
  • 1 small white onion
  • 1 or 2 pieces of bacon
  • handful of cherry tomatoes
  • handful of spinach or lettuce
  • 2 pretzel buns
  • Salt & Pepper (lots)

Instructions

  • Bring a pot of water to boil.  Add the chicken breast and boil until tender.  Remove to cool and set aside.
  • In a small pan put the bacon pieces and the thinly sliced onion together on low heat.  The bacon will cook while the onion caramelizes together- should take about 15 minutes or so.
  • Meanwhile, shred the chicken apart using 2 forks.  Slice open a ripe avocado and mash in a small bowl.  Add directly to the chicken breast and mix until well combined.  Add lots of salt and pepper to taste.
  • Slice cherry tomatoes in half and gently stir in the chicken/avocado mixture.
  • When bacon and onions are cooked, remove from the pan.  Drain the fat off of the pan but be sure to leave 1-2 TB.
  • Using the leftover fat in the pan, add the pretzel bun face down onto it.  Cook on medium-low heat until lightly toasted. Be careful not to burn it.
  • Assemble the sandwiches- on the bottom bun place your greens of choice (I used spinach because that’s what I had on hand), chicken/avocado/tomato mixture, top with onions and bacon and finish with the top of the pretzel bun.
