Short Term Memory

I’m sitting here trying to recall what I did today and I seriously can’t think of anything.

It’s 8:00pm…I had to have done something today?! Maybe if I just go through my photos…it will jog my memory.

I do remember having this lovely bFast

  • Kashi GoLean Crunch

Jogging my memory….

Oh yeah, I went for a jog ;) It was reallyyyy cold, but I wanted to run outside before the snow storm hit. I kept getting cramps in my side so I had to stop & walk quite a few times. I once read somewhere that you can get rid of side stitches by changing your breathing:

Breath slow & deep in –> Slow & deep out

Instead of the usual “Huff –> puff –> gasp” that you normally do when you’re running. Works every time.

I came back and was relieved to find this amazing salad I’d tossed up last night

I made the Portobello Salad with Spicy Mustard Dressing from Veganomicon. It consisted of chickpeas, avocado, red onions, roasted Portobello mushrooms, and some Chick’n Bites thrown on top. For my greens, I used Swiss Chard + Collards. It was tasty :) Especially those shrooms; I need to cook with portabellos more often.

On the side was something that tasted a lot better than it looked

Mashed together: Chickpea Patty + Soy Feta + Tomato Ginger Sauce. Don’t judge a book mashed patty by it’s cover color.

Then, I took a shower at some point? Yeah. And I went to the grocery store…

Something that’s not coming to mind is homework. Meh

I’m going to be really sad when Clementines go out of season

For dinner, I looked around my fridge and tried to use up some left-overs in a new/unique way. Then, I got the idea for: Black Bean BBQ Pizza

I took a Millet Flax tortilla and spread a layer of black bean hummus on top. Then, I added some left-0ver roasted cauliflower and an Amy’s Texas burger

Loved it! These new tortillas are really sturdy. Perfect for using as a mini pizza crust :)

Mesquite! I’ve been lusting over this ever since I saw the Fitnessista use it.

According to this site, mesquite is rich in protein as well as calcium, magnesium, potassium, iron, and zinc. All of that is awesome, but that’s not really why I was yearning for it. It was phrases like “Naturally sweet mocha cinnamon taste” and “Pleasant molasses flavor with a hint of caramel” that drew me in :)

I may or may not have used the banana slices to collect every bit of mesquite on that plate.

I can’t pronounce that brand for the life of me…but they make some good chocolate.

I hope everyone enjoys their weekend! And that it doesn’t snow too much :?
