I mish mashed my breakfast and dinner and it was delicious fun!
After I returned from a pretty good 6 mile run I had a classic breakfast mess – Plain Oikos, Nature’s Path Granola, Barney Butter, Ground Flax and Mashed Banana. I could eat this every day!

For dinner it was back to mashing. I made Black Bean Burgers by mashing black beans, corn, ketchup and vital wheat gluten. We ate them burrito style with this delicious guacamole from Wholly Guacamole. This is just one of those things I see all the time at the market and never actually buy. It was perfect for tonight’s dinner.

Mark also dunked his in Oikos instead of Sour Cream. He claims no one would be able to tell it wasn’t sour cream, but I don’t think that’s quite true.

When I wasn’t mashing things up today, I was at school. I’ve moved on to trying to organize the classroom library. It’s weird because it’s not my room, but I feel compelled to completely remodel. Luckily, the classroom teacher said that was okay! I also decided to get a different border.

This border represents my purpose better. You see, I do not teach in the most diverse town and I wanted to show the kids that it’s normal for people to look different. The other border made it seem like people are different in other places. In this context, I think it’s more clear that people, any place might look different than them. Plus I love to read, so it works out well.
Alright, I got some delicious cookies in the oven. Dessert calls.
