Shake, Rattle and Roll

Good Morning!

It is Monday morning at 11:15am and I am pooped out already.  I have survived a reptile party, a sleepover with 8 children, got the house ready for an Open House (after having 8+ children)  plus I got up early to teach the 6:00a.m. yoga class, Bliss Boot Camp and 1 personal training client so far today. Whew!  I am ready for a nap right about now.

It has been a great weekend and as you can see from my son's face he had the best time!  I am coming to terms with the fact that in a few short months we will be introducing one of these lovely reptiles into our home and have to admit that they don't creep me out as much as they used too.  Emmet has done his research and I have learned A LOT about reptiles this past year.  I am hoping he picks the Bearded Dragon for his first reptile but we shall see.....he really wants a snake... oh brother.

This the the Bearded Dragon and they actually have a lot of personality and since my fear is that I will end up taking care of said reptile I would at least like to have a bit of "like or love" for it.

Emmet is holding a Savannah Monitor that was a big as a baby.  This is his pick.... a bit to large for my taste.

The highlight of the party was when the kids got to hold the Burmese Python.  Yikes.... this thing was HUGE!  

All in all, I think the kids had a great time and they actually learned a lot too.  After the reptile festivities it was time to eat and Steve fired up the grill.  It was one huge meat fest and I have to admit to eating a Blue Cheese Buffalo Burger and loving every bite.  We went to Whole Foods on Friday evening and picked up some Buffalo Burgers, Grass-Fed Burgers and regular hamburger in case the kids did not like  buffalo or grass-fed beef as well as some homemade beef hot dogs, some german hot dogs as well as bratwurst.

I made a fabulous salad that I saw Bobby Flay make and it is a keeper.  I love Jicama, it is so crunchy, low in calories and good for you.  Jicama is the tuberous root of a legume plant that has the crunchy, watery texture of a water chestnut, raw potato or Asian pear.  Nutritionally, 1 cup of sliced jicama has a mere 46 calories, and 11g of carbohydrate (of which 6 huge grams are fiber) and 30% of the daily value for vitamin C.

 Jicama and Watermelon Salad-
- recipe from Food Network, Bobby Flay
  • 1/2 cup fresh orange juice, plus 1 teaspoon zest
  • 1/4 cup fresh lime juice, plus 1 teaspoon zest
  • 2 tablespoons honey
  • 1 teaspoon ground black pepper
  • Kosher salt
  • 1 jicama, cut into matchstick pieces
  • 4 cups watermelon in 2-inch chunks
  • 1/3 cup roughly torn fresh mint leaves
Whisk together juices, honey, pepper and salt in a large bowl. Add the jicama, watermelon and mint and toss to coat.

This salad is super easy to make and absolutely delicious. It was a perfect compliment to the burgers.  Now, onto the fabulous buffalo burger..... I don't eat a lot of red meat and to be honest don't really know when the last time I had a hamburger.  Buffalo is extremely low in calories and high in protein and was lured in by the thought of have a Blue Cheese Buffalo Burger.  Yum.

It is low calorie, low fat, low cholesterol, and it tastes good! If you didn't know what you were eating, you would probably think that it was the best beef you ever tasted. Buffalo meat is naturally flavorful and tender. You don't need to spice up a buffalo burger with a lot of extras or hide the flavor with steak sauces. Buffalo will make any recipe better, and tastes great by itself.

I thoroughly enjoyed the buffalo burger and both my kids love it.  It is so much leaner than beef that I think we will be enjoying more buffalo burgers this summer.

We topped the party off with an ice cream cake from Amy's Ice Cream, a local favorite.  They make an awesome Turtle Ice Cream cake made with their specialty Mexican Vanilla and homemade caramel sauce sandwiched between a super moist cake.  

 So part of the reason that I am so tired is that some of those boys stayed up until 3:00am in the morning and I am getting REALLY OLD because I just can't handle lack of sleep.  The boys were all really good and were for the most part just chatting but it is hard to sleep when you feel responsible for 8 kids.  Then after the kids were picked up, I had to scurry around and clean up our home for the OPEN HOUSE.  I guess our home is in the running for a purchase from two out of state clients but they are not sure if they want to buy or rent, thus we are going to put our house up for rent as well.  So if you know of anyone that wants to rent an absolutely fabulous home let me know......yes, having our home on the market it starting to take its toll on me and I just need to stay positive.   Breathe.

On a more positive note, I got a chance to try out some new cheese products from Weight Watchers and you too might get a chance to try them out as well in the next few weeks.... (giveaway coming up).

Well,  I tried the new Weight Watchers Reduced Fat Cream Cheese and it was fantastic and only 1 point for a 1 oz. serving.

The thing I liked best was that it came in a pre-marked portion size so you really get to know what 1 oz looks like and tastes like.

We had picked up some Whole Wheat Mini Bagels from Whole Foods and I enjoyed the cream cheese on a mini bagel topped with banana.  Cream Cheese + Banana = Rocks.

 I was also in the mood for an egg so that funny looking thing at the bottom of the plate is a fried egg. 

I will have a few more Weight Watchers products to review in the next few days as well as the giveaway so please check back.  I would definitely purchase the cream cheese again.  

That is it for now.... I am off to get cleaned up for the day and off to the grocery store before picking up the kids.  I hope you had a fabulous weekend and I look forward to getting back on track with my eating and blogging!

P.S.-- I swam laps for 1 hour yesterday and ran 7 miles this morning.... I needed to burn a few calories from the Ice Cream Cake.
