Sandwich Time in Gluten-Free Land!

This little sandwich might not look like much, but to those of us who have done without sandwiches for many months...it's a little slice of heaven!!! We've had the toughest time finding VEGAN gluten-free bread. Most commercial gluten-free breads seem to contain eggs (a little matter that will stop at least one person in this family from breathing properly - not cool!). And, I'm not a big fan of baking because it is so time consuming, and thus, haven't bothered to create our own bread recipe. So...we've mostly just done without.

That was, until we found Outside the Breadbox!!

We're totally hooked on their Imagine Egg-Free Oat Bread! Fabulous stuff. Great texture, doesn't crumble easily and tastes great. Unlike many gluten-free breads it doesn't require toasting to deliver an appealing texture and taste. It's equally delicious plain, toasted, or grilled. (And believe me...I was tempted just to make a grilled 'cheese' sandwich out of it, but opted for something a little more healthy.) ;-)

While Outside the Breadbox is a local bakery for us, it would be well worth your while to order some bread for delivery wherever you live. As a matter of fact, when we move I plan to make a regular order!

Now, as for this little sammie...it's quick, simple, and delicious. We just slathered our bread with leftover hummus from our last post, piled on lettuce, tomato, onion, and some rice cheese. Yum!
