My mom bought me admission into a cooking class of my choice at a nearby culinary school. It was so fun. My sis in law and I got to hang out, cook delicious food & eat it too!
Some recipes were healthy and I wanted to pass them along- so this is the last Sunday for What Ashley Learned in Cooking Class
Segment 2: Salmon, Cucumber & Dill Fettuccine
12 oz whole grain fettuccine cooked & drained 1 oz butter 1 oz evoo 1/4 c red onion julienned 6 oz fresh salmon filet 1/2 c cucumber peeled & sliced 1/2 c white wine 1/2 c chicken broth 1 large lemon juiced 4 tblsp butter cut into pieces 3 tblsp fresh dill (p.s. I had never cooked with dill before its AMAZING)
Melt butter in the heated olive oil over medium heat. Saute the red onion and salmon for 1 min, add the chicken broth, white wine, & lemon- reduce by 1/2 for 5 minutes. Add the butter, cucumber, fettuccine and dill. Cook until the butter has melted and pan has come to a boil.
