I am a huge salad lover, especially in the summer. It's fun to get creative and try new toppings. Here are some of my favorites:
garbanzo and kidney beans (good source of protein and fiber), pumpkin or sunflower seeds, grilled fish or chicken (I like it hot, when the rest of the salad is cold and it wilts the greens ever so slightly), grilled vegetables (try zucchini, mushrooms, peppers, onion and asparagus. Drizzle with olive oil, salt and pepper lightly, then grill.), feta cheese, cubes of cooked yams or squash, canned or fresh corn, and beets. For a healthy salad, I try to make it as colorful as possible, to add a good source of protein, and lay off the dressing. A squeeze of lemon or a dash of balsamic vinegar is often plenty for a salad already full of flavor. A scoop of cottage cheese can substitute for creamy dressings like ranch, and it's quite yummy.
