Salad Days

Good Morning!

We had an amazing sunrise this morning and I tried to capture it but this picture is not doing it justice.  The oranges and purples were super vibrant and it was a nice way to start the day.  Happy Saturday!

We have started out the weekend with a pool party last night and have two more weekend events- the big piano recital and a graduation party.  I believe our plans for today are to go swimming and golfing if the weather holds out for us.  I desperately need to go swimming.  I indulged in a little pizza and birthday cake last night and did not like the number on the scale this morning.  Ah, such is life!  Today is a fresh new start and I can get that pound + off in no time.  The power of positive thinking.

Besides eating pizza and cake, I have actually been eating a lot of salads this week and have two salads that were notable and worth making again.

The first was a Curried Black Quinoa, Dried Cherry and Asparagus Salad that I absolutely loved!  So yummy.



Curried Black Quinoa Salad with Dried Cherries, Chickpeas and Asparagus

1/4 cup black quinoa
1/2 cup water
1 tsp curry powder
1/8 cup of shallot, diced
2 tablespoon dried cherries
1/2 cup chickpeas
4-5 steamed asparagus spears, cut into bite size pieces
1/4 cup matchstick carrots
Dash of salt and pepper
Sprinkle of slivered almonds

DIRECTIONS
Bring water, curry powder and quinoa to boil.
Cover and simmer for 15 minutes (all of the water will be absorbed).
Stir in remaining ingredients.

Salad Goodies


This salad is super satisfying and it would also be tasty cold.  I ate mine warm and it was quite delicious.  This is also super nutritious and loaded with protein between the quinoa itself and the garbanzo beans.

The other salad that I loved was a Spinach, Apple, Asparagus and Blue Cheese Salad.


Spinach, Apple, Asparagus and Blue Cheese Salad

2 cups spinach
1 small organic gala apple, diced
1/2 cup matchstick carrots
1/2 broccoli slaw
4-5 aspargus spears, steamed
Sprinkling of Blue Cheese

Dressed with 1 tbsp balsamic vinegar, 1 tbsp dijon mustard, splash of olive oil.
I love apples and blue cheese.  Yum!

Just got a call about a showing in less than 2 hours so I am off to make the house sparkle!  We also had a showing at 7:30pm last night so maybe we are going to get an offer this weekend.  Come on people.... let's make this happen.
