Sometimes I get in a rut and buy the same produce week after week. But, I saw some rhubarb at the market recently and it brought back a lot of memories. My grandmother made rhubarb pies when I was little. She grew her own out in the garden. I brought some home but had no idea what to do with it. While searching the internet I discovered that one cup of rhubarb has only 26 calories and is packed with Vitamins K & C, Calcium, Potassium, Manganese and is a good source of fiber. I also found plenty of recipes at http://www.rhubarbinfo.com/recipe-index.html. I think I'll try a Sweet 'n Sour Rhubarb and Spinach Salad tonight. It sounds like just the thing to get me out of my rut.
