Red Quinoa with Molasses, Dried Apricots and Pistachios

Good Morning!

I got some great sleep and woke up happy and refreshed. I am sorry if I was a bit dour yesterday. I do not do well without my beauty rest and can be a bit of a worry wart myself.

I am big into turning new leafs and with the advent of school starting I am taking a moment to try to figure out what I want to do when I grow up. The kids are getting older, which unfortunately means that I am getting older as well, so there is no time like the present to jump into the things that I love and hope that I can make a go of it.

Mainly, I am coming up on my blogging anniversary and can't believe that I have found so much joy in blogging on food, exercise, weight loss and fun. It is amazing to have a faithful set of followers and your comments really mean A LOT to me. So thank you, thank you. So moving forward, I wanted to ask you what you want to talk about? What you are interested in? Healthy Food? Weight Loss? Fun workouts?

I am sure many of you are sick of reading about my countless bowls of oatmeal and PB & J's and I would love to tighten my focus a bit about what you want to learn and why you read my blog in the first place? Feel free to let me know, I am honestly interested and would love some feedback.

So with that in mind, I did not have Oatmeal for breakfast this morning, I made a fabulous bowl of Red Quinoa with Molasses, Dried Apricots and Pistachios. This is was a nice change of pace and I really enjoyed this.

Red Quinoa with Molasses, Dried Apricots and Pistachios


1/4 cup Inca Red Quinoa
1/2 cup of water

Bring quinoa and water to a boil. Cover and reduce heat to simmer. Cook for 15 minutes. Turn heat off and let sit for 5 minutes.

Top Quinoa with:

1 tsp Blackstrap Molasses
3 dried apricots, diced
1 tablespoon chopped pistachios

This had a nice mix of flavors. Blackstrap molasses is a sweetener that is actually good for you. It is a very good source of calcium and iron and I love the bittersweet taste of it.

I think I am going to have to whip up a batch of Molasses cookies. Yum.

We are off to the Blanton Museum today to catch the Francisco Matto: The Modern and the Mythic, exhibition, a stop at BettySport for new running shoes, out to lunch somewhere fun and a stop at some sort of grocery store for some supplies.
