I hope everyone had a good day. I had a super busy day at work - in a good way and then scooted over to school to celebrate the end of school. I can't believe the year is over. The kids had a great first year at Laurelhurst and they are actually quite sad that school has ended. My son Emmet came home with tears because his good pal is moving to California, his little "girlfriend" is moving to Lake Oswego and some of his other friends are going to DaVinci Middle School. His class was very tight knit and the whole class ended up crying together. Wow!
In an interesting twist of events Emmet decided to dress up for the last day of school. This was odd because he has dropped his preppy Texas look of shorts and polo shirts for his new Portland grunge look of t-shirts, jeans and hoodies. I think he looks great! I was worried he would be made fun of at school but he said that was not the case and really enjoyed his look.
Last Day of School
After school we headed to a friends house for a pool party. The kids went crazy and we had A LOT of fun.
When we got home Steve had whipped up a fabulous stir-fry that I absolutely loved. I tried to pry the recipe out of him but he is a bit more creative than me and just sort of uses a little of this and a little of that and creates delicious meals. Following is the basic gist of what he did to make
2 teaspoons cornstarch
1 tablespoon extra virgin olive oil
1 cup diagonally sliced celery, (1/4 inch thick)
1/2 a head of red cabbage, thinly sliced
2 cups mushrooms, halved or quartered ( he used a mix of baby portabellas and fresh shiitake)
1/2 cup pistachios nuts
2 cups cooked brown rice
1.Whisk 3 tablespoons of Braggs Amino Acids, rice vinegar, sesame oil, sriracha and cornstarch in a small bowl.
2.Heat oil in a large skillet over medium-high heat. Add cabbage and celery and cook, stirring occasionally, until just cooked through, 4 to 5 minutes. Add mushrooms to the pan and cook until the mushrooms are just tender, about 3 minutes. Whisk the broth mixture and add to the pan; cook, stirring, until thickened, 2 to 3 minutes. Add the brown rice and pistachios stirring, until heated through, 1 to 2 minutes.
Enjoy!
This dish has a nice earthy flavor along with a little crunch from the cabbage and celery. It was also very filling and family friendly. My kids actually ate it despite being mixed all together. Ha.
So my husband went to the doctor yesterday for a check-up and the doctor recommended that he follow the Meditteranean Diet to help with my husband's hypertension. I have always been intrigued by this diet because it basically incorporates all the foods I already love! I am a fan of Dr. Weil and have several of his books. He also touts the Meditteranean Diet and one of my favorite cookbooks is the The Healthy Kitchen by Andrew Weil, M.D. and Rosie Daley.
I of course wanted to run out and buy some more Meditteranean Diet Cookbooks but thought I better ask any of you if hve any recommendations??
The Mediterranean diet emphasizes:
Getting plenty of exercise
Eating primarily plant-based foods, such as fruits and vegetables, whole grains, legumes and nuts
Replacing butter with healthy fats such as olive oil and canola oil
Using herbs and spices instead of salt to flavor foods
Limiting red meat to no more than a few times a month
Eating fish and poultry at least twice a week
Drinking red wine in moderation (optional)
The diet also recognizes the importance of enjoying meals with family and friends.
This is the kind of diet that I can live with and I have been trying to incorporate more fish into my diet.
I also love the emphasis on getting plenty of exercise. Now that the kids are out of school I will need to be more creative of how and when I workout. I am getting up early to go to work so that I can have the afternoons with the kids so I am going to have to figure out a schedule where I can do a super efficient workout and keep my diet in check. The kids and I usually try to keep active and either go bike riding, swimming or walking so I am really looking forward to that. Wow-- summer really is here!
