RECIPE: Sweet Potato and Quinoa Hash Pups

  • 2 or 3 large sweet potatoes or yams
  • Quinoa
  • Zucchini
  • Corn Meal
  • Whole Wheat bread crumbs
  • Earth Balance
  • Veggie Broth
  • Garlic
  • Canola Oil
  • Cilantro

  • Wash and boil your potatoes until very soft. (if you cut them into fourths, it will ease the mashing process)
  • Once you can stick a steak knife through with ease, take them out of the water
  • With a good potato masher, mash your potatoes well.
  • Add some veggie broth, about a half a cup, and a table spoon of Earth Balance.
  • Season your potatoes with salt and pepper.
Prepare your Quinoa, however you like best. Keeping it simple goes well with this dish, meaning salt, pepper, garlic and maybe some Earth Balance.

  • Mix potato mash and quinoa together. Dice your zucchini into small bite sizes and add to the mix.
  • Add three or four teaspoons of corn meal. Mix well.
  • Roll your dough into walnut size balls, roll over whole wheat bread crumbs.

In a large pan, pour about 1 cup Canola oil (or however much depending on size of pan) you want a nice layer of oil--not too much, not too little. Let it heat up.

Place 6-8 Hash Pups into the hot oil and let it cook until crispy. 
Turn occasionally.
