Re-Squashed

I wasn't that hungry for lunch when the time came round because I ate breakfast a little later than normal. I knew that if I didn't eat, however, I would come home and eat the entire contents of my refrigerator. I heated it up before I left for school so it would still be warm by the time I got there. I had some more spaghetti squash from yesterday. I added crushed tomatoes , reduced-fat feta and baby bella mushrooms . This is quickly becoming one of my favorite meals. Sorry the picture isn't so great and looks a little messy, I was in a hurry and on the way out. Check out the steam though! The warm lunch was perfect for such a crappy day. Its still raining by the way. I finished about 2/3 of this bowl. It was 1/3 of the spaghetti squash. Ok, enough fractions. Sorry about that.



For snack today I had Kashi Cinnamon Harvest cereal with warmed vanilla soy milk . My god, this is so good. Its not too sweet and just filling enough. I had a little over a cup of the cereal. Its a great snack for a cold day.



I brought a pear with me to school today but never got around to eating it. I probably will a little later, so I'm gonna put it up now. Ha!

No trip to the firehouse with the kiddies today :( We made a tentative rain-date for this Monday, but it looks like rain again!

The rain does make me feel like baking though. I'm gonna look through some of the cookbooks I have and some of the recipes that others have posted. Any ideas?
