Last night I had the MDA Membership Committee over for dinner and a meeting. I made spicy mole chili, and yellow split pea & pumpkin soup while the ladies brought salads and dessert.
Laura made the above Moroccan carrot and chickpea salad from 101cookbooks as well as the below chopped salad with feta lime and mint from Smitten Kitchen . Both were delicious!
Elise made her famous cucumber salad while Melissa brought a spiced cauliflower salad. The buffet table was set and it was time to feast!
For the mole chili I put out fresh scallions, cilantro, plain greek yogurt, and cheddar - I love accoutrements!
The split pea & pumpkin soup held its own- with fiber and color!
My salad plate was filled to the brim and all the flavors were spectacular!
We all had a wonderful time and planned events through July- yippee! Tomorrow, I am off to Toronto for the weekend to be with my friend Kristen – I’ll try and take some pictures while I’m there!
