Raw Cinnamon Raisin Ice Cream

Posted Jul 27 2009 12:08am
The raw ice cream experimentation continues! So far I've been sticking to fruit-based flavors since it is so easy to just use frozen fruit and make it taste amazing. But, I've now officially decided to venture into non-fruit flavors! This was my first attempt at a non-fruit raw ice cream and I was pleasantly surprised. I had shyed away from using ice up until now since I figure the flavor would end up being diluted compared to my fruit ice creams, but surprisingly it was not! The only problem I ended up with was a few ice chunks left in the ice cream that the food processor didn't seem to be able to get to. Not too much of a problem in my book!

I gave the BF the version listed below and he loved it (except for the above-mentioned ice chunks). For mine, I took a bit of the ice cream and mixed it with brown rice protein powder and it turned out great! I will probably be making myself protein-ice cream from now on!
Raw Cinnamon Raisin Ice Cream
1/2 Cup Pecans
1/4 Cup Raw Almonds
3/4 Cup Ice
1.5-3 tsp Cinnamon depending on taste (do taste tests and add more if needed)
1 tsp Vanilla Extract or 1/2 tsp Orange Extract (if you want to make it taste like a sticky bun do the orange!)
3 Pitted Medjool Dates
1/4 Cup + extra Raisins

1. Place nuts, dates and 1/4 cup raisins in the food processor and process til somewhat ground.
2. Add remaining ingredients except extra raisins and process until it reaches desired consistency (you may need to add a little water to help it along)
3. Add remaining raisins at the end for some chewy chunks
