I've been totally into making raw desserts lately since it is getting H-O-T! My apartment gets incredibly hot whenever I use my oven, so in the hottest of the summer months, I usually stay away from the dreaded appliance. What is so awesome about raw desserts is how quick they are ready and cool and refresing they taste! There is no waiting for something to come out of the oven. I'm also rarely in the mood to eat anything warm for dessert when it is hot outside, so this solves both problems very well.
I initially made this for the BF, and planned on only having a bite or two for taste testing purposes. Well that plan went out the windown when I tasted it. I couldn't stop. The BF was kinda mad at me for taking more than I said I would since he loved it too. Woops! :P
If you have been wanting to try a raw dessert, but haven't gone there yet, I highly recommend this one. It is ten times tastier than any cooked pie! Crust 1/2 Cup Amonds 1/2 Cup Pecans 1/2 Cup Pitted Medjool Dates 1/4 Cup Agave Syrup 1/4 Cup Cacao Powder Pinch Sea Salt
1. Put nuts into food processor and process until ground. 2. Place the rest of the ingredients in processor with nuts and process until combined. 3. Spread onto a pie plate using your hands. (Raw desserts are also fun because you usually get to get your hands dirty!!)
Cream Filling Meat of 1 Young Thai Coconut 1 Banana 1 Avocado 1/3 Cup Pitted Medjool Dates 1/4 Cup Cacao Powder
1. Place all ingredients in food processor and process until well combined. 2. If filling is not sweet or chocolaty enough for you add a little agave syrup or more cacao powder respectively. 3. Spread into inside of pie crust.
To Serve: Slice banana over the top and prepare to be amazed!
