After the gym tonight I was HUNGRY and ready to try something new! I’ve never made or eaten Quinoa before, but after hearing about it a lot lately I thought I’d give it a try.
It’s a gluten free seed that is filled with:
Protein
Fiber
Amino Acids
Antioxidants
Vitamins
Minerals
It’s super easy to make and I didn’t have much time so I kept it pretty simple tonight.
Sauteed Onion & Garlic
Boiled 2 Cups of Water
Added 1 cup of Quinoa
Simmer 15 min.
Mixed in Diced Tomato
Season
I made a side salad
Organic Spring Mix
Dried Mixed Berries
Balsamic
I really liked the Quinoa, it was definitely…..different than anything I’ve had lately!

It felt really good to get to the gym and eat a healthy meal tonight–vacation is always fun but it’s for sure always filled with DELICIOUS foods that aren’t necessarily the best for me.
Oh but I did have an AMAZING Veggie Pizza at Gordon Biersch in AZ–it had *Spinach*SunDried Tomato Pesto with Artichokes*Mushrooms*Roma Tomato*Parm Cheese” They were like little slices of heaven–good thing we have one here in SD!
