Quick Quick Dinner

Last night, neither Dave nor I could handle heading out to our baby class and decided to bag it for dinner at home and some much needed r&r.

We decided to make pesto chicken pizza with kale avocado salad – simple and delicious!


I quickly poached a piece of chicken, shredded it, then mixed in a a tablespoon of pesto. While Dave worked on the taking the kale leaves off it’s stems, I put together our pizza- Udi’s crust topped with red sauce, pesto chicken, sundried tomatoes and part-skim mozzarella.


While the pizza cooked, I mushed together the avocado and lemon juice and then massaged it onto the kale!


Dinner made in less than 30 minutes on a week night –yeah!
