Purple Smashed Potatoes with Caramelized Onions and Basil

The Gracious Pantry is all about clean eating so I created a healthy recipe for purple smashed potatoes with caramelized onions and basil. I do love Yukon Gold mashed potatoes with real pastured butter and organic half and half too but my purple smashed potatoes are a fantastic alternative to the regular mashed potatoes that everyone loves to eat at Thanksgiving.

Purple potatoes are originally from Peru and their vivid purple color makes them a rich source of the antioxidant anthocyanin which protects our body from free radical damage and disease.

My dairy-free, gluten-free recipe also includes caramelized onions sautéed with balsamic vinegar, fresh antioxidant-rich basil, bright lemon juice, organic chicken stock, and extra virgin olive oil for a potato dish that is vibrant, healing, and delicious. If you want the recipe to be completely vegan use organic vegetable stock. Once you make these potatoes for Thanksgiving it will quickly become a yearly favorite on your table!
