Pumpkin Pie for Breakfast

Not just for the 3rd Friday morning of November, folks.


Ok, so maybe this is secretly oatmeal. But it bears a striking resemblance to pumpkin pie, right down to the ingredients! Check it out:

  • 1/3 cup rolled oats
  • 1/3 cup each vanilla soymilk and water
  • 1/4 cup liquid egg whites
  • 1/4 cup pumpkin
  • 1/4 tsp vanilla
  • dashes of cinnamon, nutmeg, ginger & cloves
  • 1 tbsp each of almond butter and pumpkin butter on top, plus a sprinkle of golden raisins

The egg whites gave it that thick, custard-y consistency, and I love that addition for every reason, not the least of which are the texture and higher protein count. This is yet another idea I first read about over at Heather Eats Almond Butter, which came from Tales of Expansion originally. I followed their formula for the process of making this, and chose my own mix-ins for the pumpkin-pie re-creation. I love the taste of pumpkin pie too much to limit it to the Holidays, so I was excited to try this oatmeal method but had to wait until the weekend to do it, since it requires constant stirring. For this reason, be sure to get out and measure all your ingredients before starting, at which point your hands won't be free until it's all in your belly.

My bowl of oatmeal got its sweetness from the pumpkin butter stirred in, but if you are without this ingredient, I would recommend perhaps cooking some brown sugar or other sweetener into the mixture because the list of stuff above by itself won't make it very sweet. Just a tip.

I've also been seduced by the coffees topped with whipped cream on Heather's blog, so I gave in this morning and adorned my mocha with a nice fluff of extra dessertyness.


After all, if I had really been eating pumpkin pie, it would have had whipped cream on top. I wasn't feeling it for my oatmeal, though, so there was nothing for it but to squirt it atop the coffee. My hands were tied!

Now that I've had an excellent bowl of sustenance and done my favorite yoga workout ever (Rodney Yee's Power Yoga Complete Workout ), it's time to crank through some cleaning and errands because I think a matinee might be in my future for today. :)
