Pumpkin Pecan Spelt Pancakes

Good Morning!

It was an early start to the day today.  The kids and hubby got up at the crack of dawn and headed off to Gulfport, MS.  I got up early to give them a good send off and miss them already.  I have the day completely to myself and want to enjoy it to the fullest!

I started it off with a nice glass of lemon water and 5 Super Green Food capsules then moved onto the caffeinated stuff!  A nice cup of strong coffee with a splash of milk and a packet of Truvia.   Since I had the time a made a batch of Pumpkin Pecan Pancakes. 

Pumpkin Pecan Pancakes

1 cup spelt flour
1/2 cup cake flour
1 tsp baking soda
2 tsp baking powder1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tdp ground nutmeg
1 cupbuttermilk
1 cup canned pumpkin puree
2 eggs
2 Tsp oil
1 tsp vanilla
2 tbsp  dark brown sugar

1. In a large bowl, whisk together the first eight ingredients (spelt flour through nutmeg). In a separate bowl, whisk together the last six ingredients (buttermilk through brown sugar).
2. Pour wet ingredients into dry ingredients and blend together with a wooden spoon until just combined. Lumps are ok, just make sure all the flour on the bottom of the bowl is mixed in. If batter seems too thick to pour, you can gently stir in a little more buttermilk.
3. Drop pancakes by ladleful onto a medium-hot griddle. Pancakes are ready to turn when the edges start to look a little dry and you can see small bubbles forming on the surface.

1 tbsp pecans
Drizzle of Pure Maple Syrup

Top with pecans and maple syrup.  A little goes a long way so don't douse them with either.

I have got a busy week ahead with doctor's appointments, work and other fun things such as getting my hair highlighted!

So I am going to spend the day getting organized and am taking myself to an hour and half yoga class at noon.  I am so excited.  I am then off to Sprouts to so a little healthy grocery shopping!  Since it is just me that I am feeding I can try out a few things I know my family won't eat.  I also must admit that I have a little dessert that I would really like to make this afternoon as well. 

I am really getting excited for Thanksgiving and can't wait to cook.  I have been watching Food Network all weekend and there is so many good ideas.

I am off to do my weights and then get ready for yoga class and errands.  Have a wonderful Sunday and I will check back later with recipes for dinner and dessert!
