Upon first bite, it was clear this was going to be my Thanksgiving cranberry sauce, so I immediately cooked up another batch. It was gone the next day. I tripled the recipe, cooked it up for a third time, and am storing it in our basement refrigerator so I don’t have easy access. Still, my family will be lucky if they see it on their plates come Thanksgiving. I’m concerned that my skin is going to start taking on some sort of cranberry hue and have found myself reading articles like this: Can You Overdose on Vitamin C ?
This twist on cranberry sauce that takes it to a whole new level. I wish I could give you a bite through this screen. You’ll have to trust me and make some yourself. Seriously. You must. Thanksgiving will never be the same.
:
2 lbs cranberries
3 C port
1/2 C balsamic vinegar
2 C chopped figs
pinch of salt
1 1/2 C brown sugar
1-2 rosemary sprigs
Place port, vinegar, brown sugar, rosemary sprig, figs & salt in a saucepan.
Boil and reduce to simmer, stirring, about 10 min. Remove rosemary. Add cranberries and stir occasionally until cranberries begin to pop and sauce thickens, about 8-12 min. Adjust sweetness if necessary.
