Pineapple and Pork Tacos with Avocado Crema

Good Evening!

I am so excited to share this recipe with you because my whole family loved it and that is not always the case.  I had checked out the Flat Belly Diet Cookbook from the library the other day and am finding some really good recipes out of it.  You can also find the recipes online at www.prevention.com

The recipe for Pineapple and Pork Tacos with Avocado Crema was super simple to make and absolutely delicious.  The only tweak to the recipe I made was to use greek yogurt instead of non-fat sour cream and I must say I was super bummed because I could not find the La Tortilla Factory Hand Made Style Corn Tortillas that I raved about before.  I actually bought the La Tortilla Factory Smart & Delicious  Whole Wheat and Green Onion Tortillas by accident to today but they ended up being a great addition to tonights dinner.  If you can find the Hand Made Style Corn Tortillas use those instead.

Directions

1.
To prepare the pork and pineapple: In a cup, mix the sugar, cumin, coriander, cinnamon, pepper, and salt. Mix half of the spices with the pork, then toss with the oil. Mix the remaining spices with the pineapple. Let stand at room temperature for 15 minutes while preparing the avocado crema.

To prepare the avocado crema: Whisk the avocado with the sour cream, lime juice, and salt in a small bowl. Press a piece of plastic wrap directly onto the surface to keep the crema fresh looking.

Coat a large nonstick skillet with olive oil spray. Warm over medium-high heat for 2 minutes. Add the pork and cook, turning once or twice, for 8 minutes or until browned and cooked through. Add the cilantro and toss to combine. Transfer to a clean plate and cover loosely to keep warm.
4.
Add the pineapple to the pan and cook, turning once or twice, for 3 to 4 minutes or until golden. Remove from the heat.
5.
To assemble each serving, place 3 tortillas on a plate. Divide 1/4 of the pork and pineapple between each tortilla. Top with the crema and roll up.
 
The taco was so good that I had to have another one!  
 
I also felt like a kid this afternoon because I indulged in a glass of chocolate milk afterschool with the kids.
 


I love this Mootopia Milk that I can find at my local grocery store.  It has 50% more protein and 50%  less sugar than normal milk and I also buy the fat-free regular milk.  I love the protein counts and this is a really good little afternoon treat!

Chocolate milk is so good and for 1 whole cup it is only 150 calories, has 4.5 grams of fat and 12 grams of protein.  This is also a great thing to have after lifting weights to replenish your body and start rebuilding your muscles.

Last but not least, dessert tonight was Greek Cherry Pie.  For some reason I picked up a can of Cherry Pie Filling at the grocery store just because it looked good.  I used this as my topping for my greek yogurt tonight and it was AWESOME!


 
 
Greek Cherry Pie
 
2/3 cup Fage 2% Greek Yogurt
1/3 cup Lucky Cherry Pie Filling (sugar-free)

Yum!

I thought about adding a sprinkle of chocolate chips or some crunched up graham crackers which I think would be good but kept it simple and it was totally satisfying.
