Pig Out Day

Good Morning and Happy Saturday!

Do you ever have those days where your stomach is an endless pit and you never really get full?  I was on a bit of a feed bag yesterday and am not sure if it was due to the cold weather or that time of the month but I was certainly enjoying eating. 

To compensate for all the eating I did get in a good workout.  I did an hour of cardio and 30 minutes of weight lifting so luckily the scale was only up by 4 ounces....

I started the day off with a SunButter  & Banana on Our Daily Bread which was not a bad way to start the day off, it actually gave me a lot of energy for my workout.  It is just that if I start my day off with bread I try to balance the rest of the day's meals with more protein and veggies.

I had some cantaloupe later in the morning but did not take a picture for some reason.  For lunch I was craving an Egg Taco.  This is one of my favorite meals but I also knew that we were going out for dinner at Mandola's that evening so I debated between having a Greek Yogurt Berry Bowl and an Egg Taco but the Egg Taco won out!

Egg and Black Bean Taco

1 whole egg
1 egg white
1/4 cup Fat-Free Refried Black Beans
1 slice soy cheese
1 tbsp Gauca-Salsa
1 La Tortilla Hand-Made Style Corn Tortilla (love these!)

This was sooo good!

Zoe had her 7 year check up after school and Emmet had a Destination Imagination meeting so we decided to celebrate with dinner at Mandola's Italian Market.   This is one of my favorite restaurants in Austin. 

I started off with the Misto Salad.

and then ordered the Florentina Pizza-- made with extra virgin olive oil, spinach, artichoke hearts, roasted garlic, asiago, fontina, romano and balsamella sauce.  Yum!

I ate 4 pieces of the pizza... it was hard to resist.  And if that was not enough, I stopped by the dessert case on the way out and picked up a beautiful Pear and Almond Tart.

I ate half of that later in the evening.  I am definitely going to reproduce this dessert it is amazing! 

So today is another day and a fresh start so I am going to try to be a bit better today with my eats.  I was supposed to teach yoga this morning but no one showed.  Boo hoo.  I was actually really bummed and hope that class picks up next week.  It was a cold day-- in the teens this morning so I could see how it might be hard to get out of bed.  

I jump started my morning with an awesome bowl of Pear and Pistachio Salba Oats.  


Pear and Pistachio Salba Oats

1/2 cup rolled oats
1/2 cup Mootopia Skim Milk
1/2 cup water
1 tbsp Salba Smart

Combine above ingredients in small pot and cook over medium heat for 4-5 minutes.  Remove from heat and top with:

1 small pear, diced
1 tbsp pistachios
drizzle of honey


I have had several cups of Joe this morning and need to drink a bunch of water now.

So we are off to the Reptile and Amphibian Expo today.  I must really love my son because it is all the way up in Round Rock and he is mighty excited!  I really don't understand his love of lizards and such but we have promised to let him get one as a pet when he turns 10 which happens to be about 6 months from now so we are going to go and check this out and then hubby wants to make dinner for us tonight so I suspect we will be going grocery shopping as well.

I also need a little pep talk right about now because I am having a bit of a hard time living in the moment and want to hear back from some more law schools (fyi-- hubby has applied to law school for next fall)..... particularly UT.   I was so excited for everyone to get back to work so the administration people at the law schools could start making decisions and letting us know.  I had high hopes that we would get some letters in the mail yesterday but no go.... so I have to admit that I am waiting for the mail to come today to see if we hear anything.  One of the schools he applied to was Lewis and Clark in Portland, OR.  I was accepted there for undergrad and have always had a bit of regret that I did not attend.  Now, I  may not have met my hubby so there is that but it is a great school and was so excited that it is #2 for Environmental Law and that Steve applied.  I am living out my dreams vicariously through him..... so I would love it if he got in.  So the silly reason I did not go was because they had co-ed  restrooms and I was mortified to think that I might have to go # 2 in a stall next to a boy.  I laugh at myself now being so short-sighted.... I am sure I could have figured out something!  But it is a bit of a granola school and although I like to fancy myself a bit of a granola....that is not really the whole me as you may have figured out by now.

So enough future talk.... it is time to get ready to check out some lizards and bearded dragons and such!  I hope you all stay warm and toasty today and I will check back later.
