The bakery is absolutely adorable, just like I thought it would be. We actually went for lunch to check out their savory menu.
I ordered the Black Bean and Corn Quinoa Salad. Yum!
I liked this salad so much that I had to come home and recreate at home. It makes for the perfect lunch. Protein andVeggie packed. It has been a while since I have made a good quinoa salad and this one hits the spot. I packed mason jars with the Corn and Black Bean Salad and they are all ready to grab and go.
Garnish with salsa and avocado.
Combine cooked quinoa, black beans, zucchini, corn, bell pepper, jalapeño, tomatoes and pepitas. Gently toss together. In a small bowl whisk together olive oil, white balsamic vinegar and dijon mustard. Pour over quinoa/veggie. Gently toss again. Garnish with salsa and avocado.

I think one of the reasons I love Petunia's so much is because owner, Lisa Clark is a little, itty, bitty thing and I like to believe I can eat her scrumptious treat guilt free. Ha!
Zoe earned her treat because she had played in the Basketball Championship Tournaments all morning.
