My kids are really into tongue twister’s these days. One of our favorites of course, Peter Piper Picked a peck of Pickled peppers. So, this colorful rainbow salad is made in honor of Peter! Peter Pepper picked a perfect pickled salad for some pleasant people.
Normally, we don’t add saltines and almonds to make a ‘meal’, but Erica was helping me set up this plate for the photo, and insisted it made a great balanced meal. lol.
1 Zucchini, chopped
1/4 red onion, chopped
1 tomato, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
Combine all ingredients in a bowl and chill until ready to eat (at least 1 hour or longer)

I’ve got a few more bell peppers, so I think I might make some fajita’s too! This salad was delicious, but my kids didn’t eat very much of it. We haven’t bought bell peppers enough for them to love them. They are kind of pricey in Utah, but I may have to buy them a little more often so they begin to enjoy them.
